- 2 limones, partidos a la mitad
- Al gusto Lechuga o col, lavados, desinfectados, partidos en juliana
- 6 rabanitos, lavados, desinfectados, rebanados
- Cantidad necesaria cebolla morada, picada
- 1 aguacate, mediano, partido en 4 a 8 rebanadas
- al gusto Salsa de chile seco, de árbol, para pozole

- Escurrir el maíz precocido, enjuagar y poner a cocer, en el caldo de verduras, agregando la cebolla blanca y la media cabeza de ajos.
- Si no se tiene el caldo de verduras, usar agua agregando el consomé vegetariano. El cocimiento en olla de presión es de 30 a 35 minutos.
- Para el caldo de verduras: usar los 2 litros de agua y agregar las verduras seleccionadas, pimientos, brócoli, zanahoria, en juliana, el ejote y hoja Santa con el consomé vegetariano. Hervir.
- Colar y usar el caldo para la cocción del pozole. Reservar las verduras.
- Lavar y desinfectar las verduras de guarnición, lechuga o col, cebolla, rabanitos. Limón en cuartos o mitades y el aguacate.
- Lavar el champiñón, secar con toalla de papel y cortar en cuartos, si son pequeños, o en láminas si son medianos.
- Agregar aceite a una sartén y al estar caliente agregar los champiñones, condimentar con orégano, comino, pimienta negra y ajo en polvo, Salar ligeramente.
- Revolver bien, tapar 5 minutos, revolver, probar de sal y dejar resecar. Al reservar apagar el fuego.
- Cuando se haya terminado de realizar la cocción del pozole, retirar la cebolla y ajos, integrar las verduras reservadas y los champiñones.
- Incorporar todo lo anterior, a la olla del maíz pozolero, verduras y champiñones, cocer juntos, para integrar sabores. Comprobar de sal.
- Servir en plato ancho y hondo. Comer con tostada.

- Cada comensal agrega las verduras de guarnición, lechuga o col, cebolla, rabanitos, aguacate, gotas de limón, salsa para pozole y sal, a su gusto y a comer. Se acompaña para su degustación con tostada.
